Perfect party or family meal. So easy to start in the morning & finish up with toppings when the kids get home or guests arrive.
- 2lb/1kgs lean tri-tip sirloin roast, trimmed of fat
- 8 cloves garlic
- 1 Tbsp smoked paprika
- 1 Tbsp ancho chili powder
- 1 tsp salt
- 1 tsp black pepper
- 1 onion, chopped
- 1 bay leaf
- 1 cup beef broth
Cut tri-tip into 2 inch wide strips. Create a rub by mixing together the garlic paste, paprika, chili powder, salt and pepper and cover strips with the rub.
In a 4-6 qt lidded pot, put onions and beef broth and place rubbed meat on top. Put the lid on and bring pot to boil, then let simmer for 15 minutes.
After 15 minutes, transfer into Wonderbag and let slow cook for 8 hours.
Break apart meat and serve in corn tortillas, on top of a bed of lettuce or even in a lettuce wrap.
For the kids, I rolled up in flour tortillas with cheese and topped with lettuce, tomatoes, salsa or your favorite taco topping.
