The dish has its roots in the region of Liguria, which is found on the north western coast of Italy, often referred to as the Italian Rivera. The area is famous for many things, one of which is it’s cuisine and another is that it is the home of Italy’s most popular sauce, the Pesto.
- 8 chicken drumsticks
- 3oz/85g to 14oz/397g can diced tomatoes (in juice) or your favorite chunky tomato sauce
- 1 cup sliced black olives
- 2 Tbsp capers
- ½ cup chicken stock
Add all of the ingredients into a 4 quart pot. Bring sauce to a gentle boil then reduce to medium low and simmer (15 minutes).
Place your lidded pot in the Wonderbag. You can leave it to cook all day (it’s done after 2 hours, it falls off the bone after 6+ hours).
Serve this over pasta or any grain of choice. Garnish with shredded parmesan cheese as an optional extra.
