As a child, I remember being told “eat your carrots, they help you see in the dark”! I was not a carrot lover, but one way my mom could get me to eat carrots and alleviate my fear of being night blind was in soup. This is such a tasty soup and so quick and easy to make. Everything gets lightly sautéed, the liquids added, all brought to the boil and popped in the bag. The soup is blended when ready to serve, and it can be dressed up with some basil or coriander pesto. There are so many variations to carrot soup – add a bit of ginger and orange rind, or chilli and coriander, apple and pepper, the list goes on! Serve with some nice soft whole wheat rolls and send left overs for lunch in the small Wonderbag.
