Surely one of my all time favourite dishes, Paella when made well is a symphony of flavours and textures. With this recipe, it is really important to follow the quantities of the recipe and the timings to ensure that the rice is perfectly cooked. With it being National water week, the Wonderbag is also a great way to be water wise, as you use less water than stove top or oven cooking. The beauty of paella is that if there is a specific protein that is not so popular with your family, you can leave it out, and add extra of one of the other proteins. The spice mix however should not be tampered with, as this gives the beautiful balance of flavour and some of the spices contribute to the colour of the dish as well. Perfect for a lunch or and outdoor meal on a pleasant evening while you sip something cold and watch the sun go down. Serve with a crisp salad, or, if you are not watching your carbs, some crusty homemade garlic bread!
