Healthy, hearty and packed with goodness and rich tomato flavours! Probably one of the quickest and easiest soups to make, so it is perfect for midweek madness. I also like to sometimes have a chunkier soup that has not been blended and this is a family favourite. You actually feel healthy when you eat it, so serve it with a nice whole wheat or rye bread. You can be quite experimental with this soup and use seasonal veg, locally sourced. The base is the barley, celery, onion and tomato, but you can then add the vegetables that your family enjoy.
