Tuscan Bean Soup
With more and more constraints on the budgets, soups are the way to go, as they are filling, but lower in calories and far more economical to make. Soups are also a great dish for Wonderbag Wednesdays, when we try and stay away from meaty dishes. This Tuscan bean soup can be made using chicken bouillon or vegetable bouillon, and although the recipe does call for a small amount of bacon, I like to add some smoked paprika and a touch of sundried tomato pesto for some smoky rich flavour. If you have children or a husband who do insist on some meat in their soup, add some finely chopped smoked chicken if you prefer this to using bacon. I also tend to add some extra fresh parsley and chives if I have in the garden. Serve with bread of your choice.
