A family favourite and a wonderful meat free option! I always tell friends who are entertaining for the first time to make lasagne. Serve it with a big seasonal salad and some crisp garlic bread and you will have a table full of very happy guests. It is really one of the easiest dishes to make, and unlike normal pasta, you don’t have the battle of cooking the pasta al dente. This is packed for of flavour, with spinach, mushrooms, olives, artichokes, cheese and tomato. I love to add fresh basil and parsley, and nice freshly ground black pepper.
