Quick and easy, light and packed full of fresh vegetable goodness! These ratatouille crostini are great as a party appetiser, or as a light meal. I love the fact that you can use locally sourced vegetables and adapt the recipe to what is in season. I often add mushrooms or cherry tomatoes from my garden or a bit of fresh chilli to spice things up. If you would like to serve it as a light dinner, cut your baguette into bigger, longer pieces and double the amount of goats cheese. Serve it with a fresh salad and you have a great meal! If you want to serve as an appetiser at a party, pre prepare your baguette spread with goats cheese, and top with the ratatouille at the last minute. Give it a try and let us know what you think!
