Weekends are for a bit of indulgence and I am a real sucker for chicken and leeks in a creamy sauce, especially served with a homemade pasta and fresh salad. This dish is wonderful served with a creamy spring onion mash or basmati rice as well. I like to brown my chicken a bit so that it has a richer colour, as the sauce is very creamy, and it is also attractive to stir chopped chives through the dish just before serving. If you are pressed for time, used chicken breasts cut into chunks instead of pieces with bone and skin, as this will require about half the time in the Wonderbag.
