Fiona James

Fiona has 15 years financial management experience, having worked in various Chartered Accounting companies, as the Financial Manager for Evertrade and prior to that, Canon South Africa. 

The last six years of her working career has been with Wonderbag, where she currently is the General Manager. 

To best characterise Fiona, Sarah Collins, the founder of Wonderbag, has the following to say about her:

Ursula completed her National Higher Diploma in Food and Nutrition at DUT. She then worked briefly as the food buyer at Durban’s Royal Hotel before purchasing the French Garden Restaurant and Coffee Shop and ran Food and Flowers catering for 6 ½ years.

Ursula then joined Singita Private Game lodge as Executive Chef.  After which she moved to County Wicklow in Ireland, where she worked as head Chef for 2 years at Rathsallagh House before returning to SA. On her return, she took up the post of Head Chef at Aubergine and Lemongrass, while consulting to various restaurant groups plus training and lecturing FOOD 111 at DUT.

A year later she was head hunted by Unilever Food Solutions, joining as a sales Chef for KZN. 18 months later, she moved into the Foods retail R&D business to lead and grow Chefmanship in Africa, Middle East and Turkey whilst focusing on product development, growing the brands and training. She also served on the global leadership team.

In 2012, she joined the Unilever Global CTI team, in Germany where she worked on Consumer research, focusing on Asia and Europe. In December 2014, she resigned from Unilever to come home to get married, this was followed by 18 months of consulting, contracting, catering and running cooking classes.

In 2016 she joined the Wonderbag team as their Chef and Food Specialist.
